I Triple Dog Dare You!

While I was scrolling through my Facebook newsfeed one day last week, one of my friends shared this recipe.  I think it was found on Pinterest.  To be honest, I don't know who's recipe this is and I apologize for not giving the person who created this slap your hand on the counter good dessert bar the credit they deserve.

1 roll Toll House cookie refrigerated cookie dough
1 package chocolate sandwich cookies
1 box brownie mix

Pre-heat the oven to 350 degrees F

Very important!!! Line a 13 x 9 baking dish with Parchment paper or you will not get these babies out of the dish looking pretty.

Press the cookie dough evenly on the bottom of the parchment paper lined baking dish.  Place one row of chocolate sandwich cookies on top of the cookie dough.

Prepare the brownie mix per package directions and pour evenly over the cookies and cookie dough.

Bake per brownie package directions.

Once completely cooled, cut in to squares and watch your family devour them!

This should only be attempted by seasoned chefs!

Happy Monday!

Oatmeal Raisin and Macaroon Cookies PLUS Lagniappe from My Daughter, Lauren

This is my oldest homegirl, Lauren.  She can't stand the term, "homegirl".  It is what it is.  She will be a senior in high school next year.  So, the mommy ride and being in any kind of control is almost over.   Poor Kaitlin...to say I am proud of her is so lame, because I am so much more than proud of her.  What do you say to a child who is worried because her "Trig" grade DROPPED to a 99?  She always does the right thing...she's a better person than I am.  As I type this, tears stream down my face.  If she even read this blog, I would be in so much trouble for typing all of this but what I am about to share with you...well let's just say I would have to sleep with one eye open as long as she has a key to our house.  I found this poem, she wrote for her Honors English III class and sheesh, she amazes me with everything she does.

I Am From

I am from Irish and French descent.
From a city that surely celebrates Lent;
a place where strangers are friends.
I am from the city where the rules are meant to bend.

I am from a tiny house and sharing a room.
From swimming all night and starring at the moon;
from an award winning lawn and garden
from talking back followed by, "I beg your pardon?".

I am from always do your best, nothing half-ass
and groggily waking up for Mass.
From always having a huge Thanksgiving.
I am from two parents who bust their butt to make a living.

I am from living two minutes away from my cousins,
from arguments with my sister by the dozens;
but realizing I love her more than my words describe.
I am from wishing I could once again be five.

I am from homemade food with a kick;
adding a little of that and a little of this.
From dinner is always a family affair
and praying before my meal with people who care.

I am from a town that was turned upside down
knick-knacks and prized possessions were drowned.
From a city where "victim" is an insult
and if you don't make the best of your situation, it's your own fault.

I am from the Big Easy
the city that tugs at my heart,
the city that always has a reason to celebrate.
I am from the best city in the world,
I am from New Orleans.

Wow..thank you for humoring me.

These cookies were the first thing EVER, I ever made, cooked, or baked.  I was maybe around 9?

It's an old recipe from my River Roads book and sometimes, you just have to go back.

Who's with me?

1 cup shortening
1 cup brown sugar (light or dark)
1 cup granulated sugar
1/2 teaspoon vanilla
2 eggs, unbeaten
1-2/3 cup all-purpose flour
1 teaspoon soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 cups rolled oats (quick cooking oats work just fine)
1/2 cup raisins

Mix thoroughly the shortening, sugars, vanilla and eggs.  Sift together the flour, soda, cinnamon, and nutmeg, and add to mixture.  Fold in rolled oats and raisins.  Drop  by teaspoonfuls onto greased cookie sheet (siplat and parchment paper work, save the extra work and calories).  Bake 10 to 12 minutes at 350 degrees F.  Remove from oven, cool 3 minute son baking sheet before moving to a wire rack to cool for 10 more minutes.  Makes about 4 dozen cookies.

These cookies can be your best friend or be there to share with a best friend.  They can also just be there for you after you've finished a good cry.

Ricotta Cookies

We woke up Saturday morning to this.  Oh we were warned, but the weather forcasters here are rarely right.  The white stuff kept coming down until early afternoon.
So what's a girl to do?  Make breakfast of course, but some members of my family prefer eating fresh snow.

Saints fans prefer a high fiber, Budlight for breakfast and find crafty uses for the bottle caps.  Did you know they make great snowman eyes and nose?  12 and 0 baby, lots of cause for celebration!

Lucy from sweets, savories, etc. posted an awesome cookie recipe a week or two ago and I had all of the ingredients handy so I made these wonderfully delicious cookies!

Ricotta Cookies:

1 cup butter, soften at room temperature
1/2 cup ricotta, at room temperature
2 teaspoon vanilla
2 cups sugar
2 eggs
4 cups flour
1 teaspoon baking soda
1 teaspoon salt

Preheat oven to 350.

In a large bowl, blend softened butter with ricotta until creamy. Add vanilla and mix well. Add sugar gradually, beating until well blended. Add eggs & mix well. Slowly stir in dry ingredients & blend well. Drop from a teaspoon onto lightly greased cookie sheet. Bake 10 minutes, don’t over bake. Cookies will have only a small amount of golden coloring.

After cookies have completely cooled, frost with glaze & sprinkle with sugar sprinkles.

Glaze Ingredients:

1 1/2 cup powdered sugar
1 teaspoon vanilla extract, or flavoring of your choice
2 to 4 teaspoons milk

Makes approximately 70 Cookies.

Thank you Lucy, these were more than I hoped they would be!

Toasted Almond & White Chocolate Chip Cookies

Today’s offering is one of my all-time favorite cookie recipes: Toasted Almond & White Chocolate Chip Cookies. Oh my goodness! They’re so delightful. Rich, chewy, that luxurious almond flavor…and best of all, when they’re baking, they fill the kitchen with a wonderful aroma.

I’ve made these before with just a splash of Amaretto added to the dough, and it makes them almost too delicious for words. But the basic recipe is wonderful, too—give it a try both ways!
2 sticks melted butter
1 cup sugar
3/4 cup brown sugar
1 large egg
1 large egg yolk
2 teaspoons almond extract
1-1/2 teaspoon Amaretto (optional)
2-1/2 cups flour
1 teaspoon baking soda
1 cup white chocolate chips
3 oz. slivered almonds
Pre-heat oven to 350 degrees.
Place almonds in a pan over medium heat. Toast and turn until toasted. Your nose will let you know when they are done. Don't walk away from them, because as soon as you do, they will burn!
Using a stand or hand mixer. beat melted butter and sugars u til thoroughly combined. Slowly beat in egg, egg yolk, almond extract and Amaretto.
Place dry ingredients into a large bowl and stir to combine, then slowly add them to the wet ingredients. When completely blended, fold in chips and toasted almond slivers.
Using a cookie scoop or teaspoon scoop teaspoonfuls of cookie dough onto a parchment or silpat lined baking sheet.
Bake for 7 to 10 minutes or until edges start to brown. Allow cookies to cool for about 3 minutes before moving them to a cooling rack.
The homegrilz love eating these cookies. And you will, too!

White Chocolate Chip and Pecan Cookies

My oldest daughter and I are kindred souls when it comes to cookies. We like cookies with white chocolate in them, My youngest daughter and my husband will pretty much eat any kind of cookie, simply because it's a cookie.

This is a basic cookie dough recipe and so very simple. This dough can be used to make drop cookies immediately, OR it can be refrigerated or frozen in logs of dough, ready to slice and bake whenever you have the craving for something sweet.

2 sticks melted butter
1 Cup sugar
¾ Cup brown sugar
1 large egg
1 large egg yolk
2 teaspoons vanilla
2 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup white chocolate chips
1 cup chopped pecans

Preheat oven to 350 degrees F. In a stand or electric mixer, beat melted butter and sugars until thoroughly combined. Slowly beat in eggs and vanilla until well blended. Place dry ingredients into a large bowl; stir to combine then add slowly to wet ingredients. Fold in the chips and the nuts. With a cookie scoop or teaspoon, spoon the dough onto a cookie sheet lined with either parchment paper or a silpat. Bake for 7-10 minutes or until edges just start to brown. Let cool on cookie sheet for 3 minutes before transferring to cooling rack.

Who wouldn't think you're sweet for making these sweets?

M & M Cookies and an Award

Remember the Valentine's dance at the high school I had to chaperone? The dance was actually a fund raiser for the high school girl's soccer team to help pay off their debt when they were travelling for the state play-offs. Not only were parent chaperone's needed, baked goods were needed. My oldest daughter loves anything with M & M's so I decided to try my hand at making M & M cookies. I got this recipe from their website.
1 cup butter or shortening
1 cup packed brown sugar
1/2 cup granulated sugar
2 eggs
2 teaspoons vanilla
2 1/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 3/4 cups M&M's
Heat oven to 375. Beat brown sugar and granulated sugar, butter (or shortening) until light and fluffy. Blend in eggs and vanilla. Stir in flour, baking soda and salt. Mix well. Stir in 1 3/4 cups M&M's. Drop dough by rounded teaspoons onto ungreased cookie sheet. Press several additional M&M's into each cookie. Bake for 9-12 minutes or until golden brown.
I was totally surprised while surfing to find My Finds Online had me listed as one of their top 25. Thank you so much Amanda, I am honored to be listed with so many blogs that inspire me.

Oatmeal and Raisin Macaroons

I'm not a baker, but when I was a little girl I just wanted to be in the kitchen creating, having my Mom and Dad and brothers think I was something. I am the middle kid and the only girl. I only got attention when I got into a little scrape of trouble. Which was hardly ever, really it wasn't too much. Let's put it this way, I didn't get caught that much.

One summer when I was about nine, I found this recipe in my Mother's copy of River Roads Recipes. I wanted to make something, and as any healthy nine year old would think, it had to be sweet. I also knew that if I wanted to bake, it had better be a recipe that contained ingredients we had on hand. I knew my Mom was not running to the grocery to buy stuff just to occupy me.

I found an recipe for Oatmeal Macaroons and I made them and they were good, I think I ate two and then I was bull-dozed over by my brothers and the rest is kind of hazy.

Oatmeal Macaroons -

1 cup of shortening - I used room temperature salted butter
1 cup brown sugar
1 cup white granulated sugar
1/2 teaspoon vanilla
2 eggs, unbeaten
1-2/3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon nutmeg
1 teaspoon cinnamon
3 cups rolled oats
1/2 cup pecans (chopped)

Mix the shortening, brown and white sugars, vanilla and eggs thoroughly. Sift together the flour, soda, cinnamon, and nutmeg, and add to wet mixture. Fold in rolled oats and nuts. drop by teaspoonfuls onto greased cookie sheet or cookie sheet lined with parchment paper. Bake 10 to 15 minutes at 350 makes about 4 dozen cookies.

Gooey Butter Cookies

Priscilla at Priscilla's Baking Adventures posted this cookie recipe on her blog a couple of weeks ago. These cookies looked like something even I could bake.

I made a batch and they were gone in minutes, I was lucky to get two pictures of them. This was a hit with the homegirlz. In fact it's been a hit with the whole subdivision!

Try these cookies, you will be addicted!

1 8oz. pkg. cream cheese
1/2 c. butter, softened
1 egg
1/4 tsp. vanilla
1 yellow cake mix
1/2 c. powdered sugar

DIRECTIONS:
Preheat oven to 350 degrees.
In a medium bowl, cream together the cream cheese and butter. Stir in egg and vanilla. Add cake mix & stir until well blended.

Powder sugar your hands well. Roll into 1" or 2" balls and dust balls in powdered sugar.

Place 1" apart on ungreased cookie sheets (Siplast and parchment paper work well too) . Bake for 10 minutes. Leave on cookie sheet for 3 minutes or more before removing to cool on wire racks.
