One has to get pretty darn creative around here to get people to eat more than tacos and pizza.
My husband and our youngest homegirl love me forever when I make Summer Corn. Even my oldest homegirl gets a little bit excited when I make this because of how it smells while it's cooking. She doesn't do corn, but I think she may come around pretty soon.
This is so easy to make and gives some zip to a regular ol' can of kernel corn. The best part? It smells like popcorn while it's cooking. People will swarm the kitchen while you're cooking this. Try it and see for yourself!
Open 1 can of kernel corn and drain. Place corn in a sauce pan and add 2 tablespoons of butter. Heat over medium-high heat. Stir corn frequently so it won't burn. You want the corn to "cook".
When the "popcorn" smell is strong, and the corn is sizzling, add 2 tablespoons of heavy cream to the pan. Stir to combine. Lower heat to simmer for at least five minutes and up to about 20 minutes.
Serve and enjoy! This will become a regular side in your weekly rotation!
Have a wonderful weekend!
Hey Katherine,
ReplyDeleteOk I always have a can of corn on hand. Everhbody here would love this recipe. It sounds a lot better than just dumping the can in a bowl and then microwave! Have a great weekend.

Ben too, despises vegetables unless they come from his dad's restaurant (cooked the offical Southren way with butter and lard and ham hocks and deep fried...) I'm going to have to try this!
ReplyDeleteI like corn. Much like your husband, it was about the only "vegetable" I would eat as a kid...
ReplyDeleteCreamy corn, so delicious!!!
ReplyDeleteI don't buy canned corn, but I'd like to try this with frozen and see how it turns out :o)

ReplyDeleteThere's nothing like corn and cream. Corn was my favorite vegetable for many years too.
ReplyDeleteI know I say this a lot about your recipes, but I am definitely trying this out! I always have canned corn around and with the farmer's markets around here starting up, I'd love to try this with fresh!
ReplyDeleteLOL, so many people say and think that corn is a vegetable! Then I have to let them down :)
ReplyDeleteI love corn, with lots of butter, but better on the cob...
This is definitely an improvement over anything I do with corn until August. Great recipe. Only now you have me wishing it was August... I believe my mother called it "wishing your life away."
ReplyDeleteOh I need to try this, we love corn in this family. My hubby likes o put cheese in canned green beans , it really takes it up a notch!
ReplyDeleteWell, of course it's good. Sweet corn and heavy cream, what's not to love?
ReplyDeleteHmmmm... I'll have to try this! I have trouble getting my brood to expand their veggie repertoire. It feels like all we eat are green beans!
ReplyDeleteThis is so simple and yummy indeed :)
ReplyDeletesummer corn looks new and tempting to me...

ReplyDeleteNow that's a great corn dish. I am just imagine the smell of it cooking.
ReplyDeleteLooks delish! One of my favorite things in the world is frozen corn cooked in a butter with nothing but butter, salt, and pepper. I'll have to try adding the cream. Thanks!
ReplyDeleteMy husband only likes corn too. This is a must try!
ReplyDeleteThis has my mouth watering! I love the idea of popcorn! I'm going to try this for sure!
