Cajun Corn Muffins

My Dad was the real baker in our family. He made his own sour dough starter, the most luscious pecan pies and he made very savory cornbread from scratch. Being a Southern girl, I love my cornbread and over the span of my life, I've had my share.


Don't hate me, but I don't make my cornbread from scratch. I use Jiffy cornbread mix. I don't work for Jiffy, they don't even know who I am, but I do love their cornbread mix. It's very economical, very easy to make and it tastes really good and it allows me to make these spicy corn muffins!








First, infuse 1/2 stick of butter with garlic. Melt butter over low heat and once butter is melted, add a teaspoon of minced garlic and let them hang out on low heat for 5 to 10 minutes.

Prepare the cornbread mix per package directions and add one teaspoon of chopped jalapeno peppers. One box of mix makes 8 muffins.






Blend with a fork and then let batter "rest" for about 5 minutes.






Spoon batter into paper muffin cups and add a teaspoon of melted garlic butter on the top of each muffin.



Bake at 400 degrees for 10 to 15 minutes until golden brown. Remove muffins from oven and add another teaspoon of garlic butter on top of each muffin.





How can you resist something so gorgeous?

That is so funny about Jiffy cornbread mix! When my youngest son, Travis, was younger some one asked him what his favorite thing I made was and he told them it was my cornbread!! I was so shocked because that was about the only thing I made from a 'box'. I guess when it works it works! I always add about a tablespoon of sugar to it.

nope you are so right, these look so good.
I am not a big fan of Jiffy, I like the self rising cornmeal. It's so much more moister (if that's a word?). I love heat in my corn muffins, just like this.

These remind me of those cheesy garlicky biscuits from Red Lobster, but with the addition of jalapenos. YUM!

I love Jiffy Cornbread Mix! and is the ONLY one I use! My father in law is a Cornbread snob and he only eats Jiffy! Your muffins are gorgeous and I bet tasty to boot!

Katherine, What do you mean you don't make it from scratch? It is easy peasy and takes mere minutes. I have two different mixes I make. One is a sweet buttery corn muffin and the other is a campfire corn bread. I love both.

Did you daddy crumble his up into buttermilk and eat it?

I can't resist. And I won't. I think a lot of born & raised Southerners use Jiffy. The stuff works! These look fabulous -- love the added heat!

I don't use Jiffy it's too sweet for me. I use Three Rivers which I haul back from the Smokies in 10lb sacks because that's the only place I can find it. However these look and sound wonderful so I am going to make them. I LOVE Cajun!

I have a hard time not having some serious corn muffins with chili. I have a great recipe that uses a stick of butter....I will have to post it as well. Love the cajun touch.

I'm not a big cornbread fan but the kids are so I suffer. I also add onions along with garlic and jalapenos.

Oh - and do ya'll call it "pee-can" pie? Cause if you do, remind me to tell you why I have a problem with that, too. LOL

Jiffy is the only way to go! My FIL owns a Southern comfort food type restaurant and that's what they use--the cook tried to make cornbread from scratch once and there was a huge revolt!

Those look yummy...I love jiffy too. Even though it's kinda sweet and I was raised to believe cornbread should not be sweet. I'm a rebel.

I love Jiffy cornbread mix. When I'm out (which is rare), I always snag a few boxes. And I think the simplicity of it makes it taste ever so much better!
