Summer Corn

When I first met my husband, the only "vegetable" he would eat was corn. I didn't have the heart to break it to him that corn is a starch. His vegetable spectrum has widened considerably over the years.

One has to get pretty darn creative around here to get people to eat more than tacos and pizza.

My husband and our youngest homegirl love me forever when I make Summer Corn. Even my oldest homegirl gets a little bit excited when I make this because of how it smells while it's cooking. She doesn't do corn, but I think she may come around pretty soon.

This is so easy to make and gives some zip to a regular ol' can of kernel corn. The best part? It smells like popcorn while it's cooking. People will swarm the kitchen while you're cooking this. Try it and see for yourself!

Open 1 can of kernel corn and drain. Place corn in a sauce pan and add 2 tablespoons of butter. Heat over medium-high heat. Stir corn frequently so it won't burn. You want the corn to "cook".

When the "popcorn" smell is strong, and the corn is sizzling, add 2 tablespoons of heavy cream to the pan. Stir to combine. Lower heat to simmer for at least five minutes and up to about 20 minutes.

Serve and enjoy! This will become a regular side in your weekly rotation!

Have a wonderful weekend!

Hey Katherine,

Ok I always have a can of corn on hand. Everhbody here would love this recipe. It sounds a lot better than just dumping the can in a bowl and then microwave! Have a great weekend.

If ketchup is a vegetable, corn is too!

I can't stand popcorn (yes I know...I'm odd), but hubby loves it. I think I may try this out on the inlaws this weekend.

I make creamed corn (not from a can) on a regular basis, but I'll bet everyone would like this even better! The verification word is "event"; maybe it's trying to tell me something about this corn?

There's nothing like corn and cream. Corn was my favorite vegetable for many years too.

I know I say this a lot about your recipes, but I am definitely trying this out! I always have canned corn around and with the farmer's markets around here starting up, I'd love to try this with fresh!

LOL, so many people say and think that corn is a vegetable! Then I have to let them down :)

I love corn, with lots of butter, but better on the cob...

This is definitely an improvement over anything I do with corn until August. Great recipe. Only now you have me wishing it was August... I believe my mother called it "wishing your life away."

Now that's a great corn dish. I am just imagine the smell of it cooking.

Looks delish! One of my favorite things in the world is frozen corn cooked in a butter with nothing but butter, salt, and pepper. I'll have to try adding the cream. Thanks!
