Ricotta Cookies


We woke up Saturday morning to this.  Oh we were warned, but the weather forcasters here are rarely right.  The white stuff kept coming down until early afternoon.
So what's a girl to do?  Make breakfast of course, but some members of my family prefer eating fresh snow.

Saints fans prefer a high fiber, Budlight for breakfast and find crafty uses for the bottle caps.  Did you know they make great snowman eyes and nose?  12 and 0 baby, lots of cause for celebration!

Lucy from sweets, savories, etc. posted an awesome cookie recipe a week or two ago and I had all of the ingredients handy so I made these wonderfully delicious cookies!

Ricotta Cookies:

1 cup butter, soften at room temperature
1/2 cup ricotta, at room temperature
2 teaspoon vanilla
2 cups sugar
2 eggs
4 cups flour
1 teaspoon baking soda
1 teaspoon salt

Preheat oven to 350.


In a large bowl, blend softened butter with ricotta until creamy. Add vanilla and mix well. Add sugar gradually, beating until well blended. Add eggs & mix well. Slowly stir in dry ingredients & blend well. Drop from a teaspoon onto lightly greased cookie sheet. Bake 10 minutes, don’t over bake. Cookies will have only a small amount of golden coloring.

After cookies have completely cooled, frost with glaze & sprinkle with sugar sprinkles.

Glaze Ingredients:

1 1/2 cup powdered sugar
1 teaspoon vanilla extract, or flavoring of your choice
2 to 4 teaspoons milk


Makes approximately 70 Cookies.

  4. What a great idea to use ricotta in cookies!
    We have had a snowstorm too.. it is loud and blowy outside. Is it too late to toilet train the pups to use the human bathrooms?

    Right now we're getting our anticipated 6-10 inches of the white stuff; I can barely see the house across the street from me as the snow is coming down at such a dizzying rate.

  8. I am making this exact recipe over the weekend for the xaminer. How fun to see yours. These are scrumptious cookies. Snow, wind, sleet, windchill... and at theatre into the night. Not a happy camper in MN!

  9. Aw, the snow looks so pretty! We're having pouring rain right now ... which is a-ok with me! LOL

    Meanwhile, what an interesting cookie! It looks similar to the cookies my grandma used to bake. They were so tender and delicious.

  15. Beautiful snow pictures--especially the Saints Snowman... CUTE!!!! That Saints game this past Sunday almost made me have heart failure.

    Have you ever made Snow Cream???? YUM!!!! Your dog eating the snow made me think about Snow Cream--which I used to make!!! YUMMY!!!!

    My mother used to make a Christmas cookie which looked like your Ricotta cookies... I'll have to find her recipe.

  17. I've been doing a story all day for work where we've been going to elementary schools and asking the kids what their fav. Christmas traditions are, etc....most said baking Christmas cookies!

  18. Those cookies look great. My little guy watched the Saints this weekend, and is rooting for them and the Colts since his Patriots aren't doing well this year. But I don't let the 10 year old have the high fiber bud light breakfast. Our yard looked like yours on Saturday, and got worse today!

  26. I have been looking for a good recipe for ricotta cookies (or cannoli cookies as they are sometimes called in the stores here)! These look fantastic.
