Charred Corn Salsa with Blue Chips

Hey—Cinco de Mayo is tomorrow and if you’re looking for something to serve other than the tomato based salsa, how about whipping up some yummy charred corn salsa? Not that there's anything wrong with tomato salsa but you know what? A girl can only eat so many kinds of jarred tomato salsa before she gets bored and starts look at other forms of produce to be the star of her salsa.

Peel and de-silk two ears of fresh corn.



Place the corn directly on the grill and moderately char. Remove corn from grill allow to cool. Remove the kernels from the husk.




To the charred corn, add 2 tablespoons of vegetable oil, 1/2 red onion finely chopped, juice from 1 lime, 2 diced avocados, 1 finely chopped and de-seeded jalapeno, 1 handful of cilantro, finely chopped, coarse sea salt and freshly ground black pepper to taste. Thoroughly blend all ingredients together and serve with blue tortilla chips.

    OK!! I am with you; on you can only eat so many jars of salsa!! This sounds so fresh and delicious. I am making this today. My 17 year old son is a “vegetarian" at the moment and I am running out of things to make for him. I say at the moment, because he changes quickly and could be ordering the best ground beef to be sent to our home!! Anyway, thank you for sharing this recipe and have a great week!

  2. This sounds like a crowd pleaser. I shouldhave had some last night becasue there was a crowd here at this house. There was 21 all total family here missing only 2 who were in Utah. We had such a fun and LOUD time. We are a noisey bunch. They would have loved this! Happy Monday.

  20. Oh, my hubby would love this. He really likes all things corn, especially with mexican food. I like this because I bet it just explodes in your mouth with the crunch of the corn, the bite of the pepper, and the creamy goodness of the avocados. Gosh, I think I could just eat this with a spoon! YUM!

  45. I am with Dog - I cannot eat salsa from the store anymore, I have to have fresh. That corn reminds me I have not had that in a while...since spring is hear, and I actually see the sun peeping out I am firing up the grill this weekend and making some...your food is so tempting over here!
