Sweet Potatoe Fries
I love me some sweet potatoes! They aren't that pretty but they are so real, so unpretentious, so delicious and you guessed it; I'm the only one in my house that eats them. A.J. was a good sport and tried. He said they were good, but no one scrapes them off their plate that fast into the garbage when they like something. What happened to the "Clean Plate Club"?
The homegirlz were off for the weekend so they were spared.
They were very good and very simple to prepare. I love the different flare they give to the overall meal. To me, it's like having dessert with dinner.
This recipe is for two servings. You can easily double it for four or triple it for six..
Preheat oven to 425 degrees.
In a large bowl, mix together 2 tablespoons of extra virgin olive oil, 1 teaspoons of paprika and 1 teaspoon of cinnamon.
Peel and cut one sweet potato into strips. Be careful because sweet potatoes do not cut as easily as russets.
Toss the potato strips into the olive oil mixture, to coat well, and spread in a single layer onto baking sheet lined with foil and sprayed with non-stick cooking spray. Sprinkle with salt and brown sugar.
Bake for 30 minutes, turning every 10 minutes.

Hey Katherine, I love me some sweet potatoes too. Oven fries are the best. I kick mine up a little by adding a dab of honey, lime juice, and cayenne pepper to the cinnamon. Blessings, SusanD

ReplyDeleteHi Katherine, I love sweet potato fries. Sometimes I just cut the peeled potatoes into rounds and roast them with cumin and salt and pepper. Yours look yummy.

ReplyDeleteSweet potato fries are my favorite! I just love their flavor! One of my favorite restaurants used to serve sweet potato fries in the shapes of tiny coins and would sprinkle them with brown sugar--incredible! These look totally delicious.

I love sweet potatoes! These sound really good. You know, I saw these on a food tv show, these fries were coated in cinnamon and sugar and then had a marshmallow dipping sauce!

ReplyDeleteI luvvvv sweet potatoe fries. There is a restaurant here in town that has these on the menu and their secret is to boil the fries a few minutes then coat them and roast in the oven. Yum!!!

ReplyDeleteI'm not a fan of sweet potatoes as a whole-like mashed ones-never liked. I tried sweet spud fries one night out with the girl friends and LOVED them. I have never made them from scratch as I found an organic sp french fry in my freezer section and they rock my world. Hmmm, I have some downstairs, I could fire up the small toaster oven right quick!
