Have you ever seen such a perfectly beautiful peach like this before? Maybe I'm getting older or as the homegirlz say, I'm mental, but I marvel at the little things like a beautiful peach or the deep blue color of the fall sky. I have a deep appreciation of God's gifts to us all.
Last week I visited Megan's Cookin and saw a post about her favorite salad. I was in the minute I read "prosciutto".
The peach was peeled, seeded and sliced and wrapped in a slice of prosciutto. Make sure you remove the toothpicks before serving.
We used a combination of mixed salad greens topped with the grilled prosciutto wrapped peaches, calamata olives, crumbled goat cheese and crumbled macadamia nuts.
We also have this amazing Honey Vinaigrette! 2 tablespoons honey, 2 tablespoons apple cider vinegar, 1 tablespoon water, 1 teaspoon canola or vegetable oil, 1/8 to 1/4 teaspoon black pepper, and a pinch of nutmeg. Place all ingredients in a jar and shake.
You are right the peach is beautiful...you're not mental! Your salad looks beautiful too. I think those proscuitto wrapped peaches by themselves would make a tasty appetizer!
