Savory, Cheesy Cornbread


These muffins really appeal to me. One, because of the onions, two, the seasonings and three, the glorious cheese! They are perfect with a hearty bowl of chili, a healthy serving of beef stew or with your favorite soup. These muffins are so easy to prepare and are packed full of flavor. Give them a try tonight!



Saute, 1/2 of a medium sized onion, sliced thin a 1 tablespoon of olive oil and one tablespoon of butter.
Once the onions have turned golden brown. Remove from pan and set aside momentarily.


Empty one package of Jiffy Corn Muffin mix (don't judge me - this is good stuff and I'll take all the help I can get) into a mixing bowl, along with the onions, 1 cup of shredded sharp cheddar cheese (pepper jack cheese would totally rock here too) and 1-1/2 tablespoons of Emeril's Essence, 1/3 cup of butter milk (or regular milk) and 1 egg. You can change things up and use your seasoning of choice. A good garlic bread seasoning would be awesome too!



Thoroughly combine all of the ingredients and allow the batter to rest for 3 or 4 minutes. Spoon the batter into each muffin cup to 3/4 full. Top with a little more shredded cheese and bake in a preheated 400 degree oven for 12 to 15 minutes.



One the muffins have turned golden brown and the cheese has melted, remove from oven and allow to cool for about five minutes. Feast your eyes on these!



Don't tell anyone, but I never wait out the five minute waiting time.

I funny story about Travis, he was asked by a teacher what his most favorite thing I cooked for our family was??? All the wonderful recipes and home made cakes and cookies and I could just think of recipe after recipe that he could have said and what did he come up with, pray tell?????? Jiffy Corn Muffin Mix!!!!!!!!!! I was CRUSHED! And I've never forgotten either :) But guess what? he's a grown man now and I bet he would LOVE this version of Jiffy mix. I think I should try it next week for his birthday dinner :)

Jiffy corn muffin mix is one of the great inventions of the modern world. Move over, Thomas Edison, you have serious competition here. this looks like a great dress up for the muffins!

You Southern Belle! I gave cornbread my full attention one year, even buying a cast iron corn cob shaped muffin baking vessel...alas, I like it with chili, but the best it can taste, is by the recipe you picked!

Yum Katherine... I'm definitely doing to try this one. I love that Jiffy Cornbread mix--better than any homemade I've ever made or eaten. That's because I enjoy sweet cornbread and the Jiffy satisfies that craving I have.

I have a Creamed Corn caserole using the Jiffy Cornbread. Heard of it???

Katherine these sound wonderful!I'll bet they are great with chili. You know Jiffy corn muffin mix is a BIG seller in the south so there are lot's of cooks using it! I like it too!!

I like the use of onions in these! I usually throw in chopped jalapenos. Jiffy cornbread mix is 33 cents well spent, I say :)
