Spinach Amore and an Award!

I've been on a spinach kick and I love this recipe so why not call it "Spinach Amore' " ? It's savory, it's creamy, it is simple amore on a fork!


1 package of frozen chopped spinach

2 tablespoons grated onion

1/4 cup chicken or vegetable stock

2 eggs

1/2 cup low fat sour cream

1 cup grated Parmigiana-Reggiano

1 tablespoon flour

1/2 teaspoon grated nutmeg

Salt and pepper to taste


Cook frozen spinach in a small amount of chicken or vegetable stock with onion until thawed. Turn into a greased casserole. Beat eggs in a small bowl turn into casserole with spinach and add rest of ingredients. Bake in a preheated 350 degree oven for 25 to 30 minutes.

My gosh that looks good,I love spinach but my hubby hates it, thus I dont get to eat if often, LOL. thans bunches for the award,I appreciate it! p.s. you can fix you line spacing, if you want I can tell ya how!

Made a spinach dish last week and Harry loved it. He didn't know he liked spinach. I think he would love this recipe. So glad my mama made me eat my spinach as a child. I guess that is where I learned to love it.

I had that same problem this morning but it turned out to be my computer. I love spinich in any way shape and form.

I'm not a huge fan of cooked spinach dishes, though I love raw spinach in salad! This does look really good though!
